Bright Chocolate Logo and Images

Bright Chocolate

8/3 Riverside Avenue, Bright VIC 3741
Bright Chocolate is an Australian Craft Chocolate company in Bright, Victoria making small batches of chocolate from bean to bar. Similar to coffee or wine, cacao possesses an inherent terrior, or characteristics based on the variety of the cacao bean and the conditions of where it is grown. These characteristics are barely recognisable in mass produced chocolate, so it is very exciting to taste the single origin chocolate range at Bright Chocolate to discover what cacao can actually taste like. With a strong food and wine culture and an appreciation for all things produced locally, ethically and traditionally, Bright Chocolate is born. Simeon has studied chocolate making at the Ecole Chocolat Academy in Canada and is now producing single origin chocolate from premium quality cacao beans at the brick stables factory in Bright, which he has also lovingly restored to its original condition, exposing impressive wooden rafters and beautiful brickwork. When the cacao beans arrive at the chocolate factory Simeon undergoes the process of hand sorting the beans. They are then lightly roasted to develop flavours, cracked and winnowed which removes the 'husk' from the inner 'nibs'. The nibs are then added with sugar into the Conche. Here they are refined for 16 hours removing the bitterness and acidity while retaining the terrior of the cacao. The chocolate is then tempered, moulded into bars and packed by hand. The Single Origin bars are made with cacao beans from Madagascar, Ecuador, Trinidad and the Dominican Republic. These all offer a unique flavour profile from citrus to tropical to cherry to earthy and spicy'. Bright Chocolate also crafts 'Bright Fancies' available in beautiful wooden boxes. Regionally sourced fruit and nuts adorn the 'Mendiants', and chocolate lollipops are a favourite for the kids! Simeon and Shannon welcome you to experience.
Billy Button Wines Logo and Images

Billy Button Wines

11 Camp st , Bright VIC 3741
Billy Button Wines sprang to life in January 2014 when winemaker Jo Marsh made the decision to leave the safety of permanent employment and create her own brand based in the Alpine Valleys. She was already highly awarded when working for Seppelt in Great Western over eight years; she also worked vintages in the Napa Valley of California and the iconic Burgundy region of France. However it was when working as head winemaker at Feathertop Wines that she fell in love with the natural beauty of the Alpine Valleys region, its superb fruit quality and the passionate local growers nursing small parcels of less common varietals. The Italian migrant history of the area is evident in the intriguing and unusual grape varietals grown. After making the decision to begin Billy Button, Jo had to hit the ground running in vintage 2014. She quickly sourced fruit from local growers and within just a few weeks, a fascinating range of wines was being created. Gewurtztraminer. Friulano. Verduzzo. Vermentino. Barbera. Sangiovese. Tempranillio - and to round out the range; the classics Riesling, Chardonnay and Shiraz. In 2015 she has expanded the range, always seeking the hidden treasures of the Valleys. Welcome Fiano, Malvasia, Prosecco, Arneis, Pinot Blanc, Moscato Giallo. And Saperavi, Nebbiolo, Schioppettino, Refosco - phew! Come by cellar door, the team at Billy Button would love to talk to you about their winemaking adventures. Their small quantities sell out fast, so each visit will offer something different. Local produce platters are available from cellar door also. Birbante takes over each night creating delicious gourmet pizzas which pair perfectly with Billy Button Wines; poured by the glass, and available for purchase by the bottle.
