Centennial Vineyards is about cool climate grape growing and winemaking. The vines ripen with lower temperatures than most Australian wine regions. Because the climate is colder, vines ripen the fruit much more slowly and evenly than in warm regions, producing balanced, aromatic fruit.

All wines are crafted on site in the state-of-the-art winery, allowing the production of quality cool-climate wines, with maximum aroma and flavour and presented at their optimum bottle age.

Bou-saada is a 100 acre property situated in the cool wine region of the Southern Highlands.

Cradled in the high ranges above Mittagong, one hour from Sydney, Bou-saada's family run vineyard offers cool climate wines from grapes grown only on the property. Use of local timbers dominate the environmentally sensitive, Australian contemporary design cellar, where a casual vintner's lunch can be enjoyed by the fire or overlooking the vineyard.

It is home to a 13 acre vineyard which began with plantings of Sauvignon Blanc vines in 1997 followed by Merlot, Chardonnay and Riesling in 1998. In 2001, a further seven acres were prepared for planting out in 2002 adding Pinot Noir, Tempranillo and Cabernet Franc. The mixed variety vineyard enables Bou-saada to produce a wide-range of exclusive wines from their own grapes.

Marist Brothers Wines have come a long way since the first planting of Pinot Noir in 1999 to the release of their first vintage port for the Centenary of the Hermitage. Visitors to the Hermitage are now greeted by rows of meticulously tended grapevines, drawing many parallels to the French origins of the Marist Brothers.

The first vineyard that you will discover once you leave the M5 motorway from Sydney is "The Hermitage Vineyard", the home of Marist Brothers' Wines. All the grapes used in the production of these wines are grown entirely on the Brothers' property. Planted over an area of 13 hectares, The Hermitage Vineyard supports a range of cool climate grapes including Sauvignon Blanc, Pinot Noir, Merlot, Cabernet Merlot, Riesling, Pinot Gris, Chardonnay and Solera Dessert Merlot.

The Cellar Door is open each Saturday and Sunday from 11am to 4pm.

The lookout boasts stunning views of the Nattai Gorge and you can see in the direction of the Blue Mountains. The Box Vale Mine track follows the formation of an historic railway line and passes through cuttings, along embankments and through a tunnel 84 metres in length. Although much of the surrounding terrain is steep and rocky, the four point four kilometre walking track has easy grades and the return walk takes about three hours. There is also a one point eight kilometre spur track through pleasant bush land to 40 foot falls and a very steep track leads to vantage point below the falls. Gibbergunya took its name from Gibbergunya Creek. Gibbergunyah is a reserve for public recreation and for the preservation of native flora and fauna. There is a limited range of eucalypts; however there is a profusion of woody pear which resembles the waratah in foliage. The kangaroo, wombat and echidna have often been seen on the Gibbergunya Walking Track. The track is quite steep ascending from Howard's Lane, Welby but the easier approach is from Boronia Street in Bowral. Track brochures are available at the Visitors Information Centre, Mittagong.

The Cave Creek Walking Track is 14 kilometres north of Mittagong and can be reached by bitumen roads. The track provides a leisurely walk of 2.6 kilometres and takes one to two hours to complete the return journey. The track descends through various natural settings to Cave Creek, which as the name suggests passes through a small cave. There are a number of short steep sections along the track. Steps and a ladder have been constructed to assist walkers. A car park and picnic area have been provided at the track head with barbecues, picnic tables and toilets. Water is not available. The ladder should be descended backwards to prevent falling and rocks are slippery at the cave entrance. A torch is essential in the cave. Maps are available from the Southern Highlands Information Centre in Mittagong.

Mount Gibraltar at 863 metres is a collapsed volcanic core composed of very hard rock called Mount Gibraltar Trachyte or micro-syenite. 150 million years ago it pushed through the Hawkesbury Sandstone to form a high mountain now largely eroded away by wind and water. Mount Gibraltar is the highest point between the Illawarra Coast and the Great Dividing Range. It offers a range of short walks, with duration times of between 10 and 25 minutes. Numerous lookouts are accessible from Mount Gibraltar. All native plants, animals, rocks and timber are protected. Empire Cinema is the oldest commercial cinema in the country operating from 1915, and on 15 September last year celebrated its centenary. The Berrima District Art Society was founded in October 1950 by Kath Smith and a committee of interested members of the general public. In 1970 the Society acquired, through the generosity of Edgar Bent, a cottage in Short Street, Bowral, which is still its permanent home. The Berrima District Art Society is now a very active centre for the arts in the Southern Highlands and prides itself on being committed to the appreciation of the arts in the Southern. They are committed to promoting and supporting the practice and appreciation of the arts in the Southern Highlands In 1993 a separate building was built in the grounds to accommodate workshops. A variety of classes and workshops are held in this building for adults and children. The workshops cover painting in all mediums, drawing including life drawing, printmaking and many other subjects.

Lake Alexandra in Mittagong Township is a man made lake which started life as a dam supplying water for engines hauling coal to the Fitzroy iron mines almost 140 years ago. A park land reserve surrounds the lake and birdlife lives in profusion on the water and shores. Barbecue facilities and shelter sheds are available. The whole area has recently been revamped and renovated. Lake Alexandra has a fantastic picnic and children's play area. Many walking tracks start at the lake. The Mount Alexandra Reserve is 2000 hectares in area (5,000 acres). Berrima District Historical and Family History Society was founded in 1960 to encourage the study of Australian, local and family history and to establish a museum and a permanent archive for the preservation of the documentary and material heritage of the Southern Highlands of New South Wales. The collections cover the major towns of Bowral, Mittagong, Moss Vale, Robertson and Berrima and the many villages in the area including Avoca, Aylmerton, Balaclava, Braemar, Bundanoon, Burrawang, Colo Vale, Exeter, Glenquarry, Hilltop, Kangaloon, Penrose, Sutton Forest, Tallong, Wildes Meadow and Wingello. Their Image Library contains more than 8,000 images of people and places relating to the area and beyond. The Historical Society can assist with all historical information for The Southern Highlands.
